Dark Chocolate Chunky Peanut Butter Banana Bread

IMG_3722.JPGMmmmmm what’s better than dark chocolate, banana bread!? Not much when it comes to baked goods, except for the fact that it’s super healthy, nutritious and nourishing for your body! 😉

Thanks to Chocolate Covered Katie for the original recipe, in which I made a couple tweaks to make it my own. I used this recipe to also make a slightly different version with walnuts instead- which you can check out here.

Here’s my version:


  • 2 cups overripe mashed banana (be sure it’s 2 cups after mashed)
  • 2 1/2 tsp pure vanilla extract
  • 1 tbsp vinegar
  • 1/4 cup oil  (I used olive oil)
  • 1/4 cup xylitol (plant based natural sweetener)
  • 1 3/4 cup spelt
  • 1 tsp baking soda
  • 3/4 tsp sea salt
  • 3/4 tsp baking powder
  • 1/2 cup plus 2 tbsp cocoa powder
  • Dark chocolate chunks or chips
  • 1/2 cup natural crunchy or smooth peanut butter
Yield: 1 loaf
 The batter is so good, I had to get my boys to stop licking it before we baked it! LOL! 😉


Preheat oven to 350 F and grease a 9×5 loaf pan very well with coconut oil.

In a large mixing bowl, mix first six ingredients. (I just used my vitamix blender).
In a separate bowl, combine all remaining ingredients and stir well.
Pour dry into wet, and stir until just evenly combined. T
ransfer to the loaf pan and spread out evenly.
Sprinkle chocolate chips over the top and press down.

Bake for 40-60min, until toothpick comes out clean.
