Chocolate Peppermint Goddess Energy Bites

I made these for my Food & Body Image Group Member tonight, and they were a hit!!!  Of course I’m not one to keep a secret about food, so as soon as I got home, I posted the recipe!  Even my hubby and toddler were raving about them! Yay! Client and Family Member Approved! And definitely Roz Approved!  😉

Wet Ingredients:

8 tbsp organic coconut oil
1/2 cup organic cacao powder,
2 TBSP raw organic honey
pinch of Himalayan pink salt
splash of vanilla
Dry Ingredients:

1 cup raw pecans

1/3 cup raw hemp hearts

2 cup organic unsweetened shredded coconut

10 medjool dates

1-2 scoops vegan protein powder. I used Avena Originals Raw Cocoa and Natural Protein Powder.

For later: Young Living Peppermint Essential Oil (you can order through this link here, pls change Enroller ID: 3412191) or make sure you are using a high grade PURE organic, NON-GMO essential oil.

  1. Melt all wet ingredients  in a warm pan to blend to a smooth paste and set aside.
  2. Separately blend the following dry ingredients in a blender or a food processor.
  3. Mix dry ingredients into chocolate blend, while mixing in  4 drops of Young Living Peppermint Essential Oil.
  4.  Place cocoa powder  and/or unsweetened shredded coconut on a plate, and with wet hands, roll ingredients into small balls, roll on the cocoa powder/shredded coconut and place on a pan.
  5. Refrigerate or freeze!  Enjoy!

Note: You can always add your own nuts, raw cocoa nibs, and/or peanut butter in it (yes, I actually do not have PB in this one! mixing it up!)
