These are ready to eat in about 25 minutes, including prep! Much more heart healthy than your local fast food chain, which I won’t mention any names 😉
4 small sweet potatoes, washed (optional to leave skin on. I do because a) I’m too lazy to peel and b) it actually has more health benefits to leave the skin on- see below).
1/4 cup of coconut oil or olive oil or avocado oil (depending on your oil of choice, it will provide a different flavour. Coconut oil will provide a sweeter flavour)
Optional spices: Pepper, sea salt, chipotle spice (I love Mrs. Dash salt free Southwest Chipotle)
Preheat oven at 400 degrees Fahrenheit.
Cut each potato into fries shape.
Toss in oil of choice with spices (if using).
Spread on baking sheet.
Bake for 20 minutes or until to desired crunchiness.
Sweet Potato: High in vitamin C (helps protect body against toxins, aids in bone and tooth formation, digestion, and blood cell formation); Vitamin D (aids with energy levels, moods, and building healthy bones, heart, nerves, skin, and teeth, as well as supports the thyroid gland), contains iron, potassium, and magnesium.
Skin of Sweet Potato: Provides all the above and fibre!
