Lately, I’ve really been inspired to roast veggies – probably because the weather is getting colder, and naturally, our bodies seek warming foods during this period. The star of this recipe is really the dressing. I just happened to have mushrooms in my fridge that needed to be eaten soon, but you will often find me using bell peppers, brussel sprouts, kale, red onion, cauliflower and broccoli. There’s limitless possibilities!
Prep oven to 400 Degrees F.
About 6-8 cups of any veggies of choice (I don’t really measure, just whatever takes up 2 full sized roasting pans)
About 4-6 tbsp of avocado oil (you can use extra virgin olive oil too or a flavoured infused one from Evoolution, such as basil or garlic)
About 1-2 tbsp of organic apple cider vinegar with mother
About 1-2 tbsp of balsamic vinegar (you can use flavoured infused ones too from Evoolution– Mmmmm!)
Sprinkle to cover – spices of choice: Rosemary, Thyme, Lavendar, Basil, Fennel – get creative and experiment! In this recipe, I used Rodelle Spice Blend of thyme, fennel, basil and lavender (from Costco).
Mix dressing ingredients together in a large bowl, then add in veggies of choice to coat.
Place on 2 roasting pans.
Roast in oven for about 15-20 minutes, or until veggies are browned.
Enjoy as a side dish with protein and starch. I paired with roasted kabocha squash, brown rice cooked in organic vegetable broth, and pan fried chicken.

Avocado Oil: High in vitamin E, high quantities of unsaturated fatty acids and high in carotenoids (i.e., the colorful plant pigments some of which the body can turn into vitamin A, are powerful antioxidants that can help prevent some forms of cancer and heart disease, and act to enhance your immune response to infections). Avocado oil also has a very high smoke point (520 Degree F) so it’s properties are not broken down by heat.
Organic Apple Cider Vinegar – Oh man, I love me some ACV! It’s got powerful health benefits! It helps the body maintain a healthy alkaline pH level. Higher acid levels (i.e., lower pH level) leads to a lack of energy and higher incidences of infection. ACV can also help stimulate cardiovascular circulation and help detoxify the liver. Balsamic Vinegar – the polyphenols (potent antioxidants) in balsamic vinegar limits the ability of LDL (i.e., bad) cholesterol to oxidize, which means it reduces the amount of damage done by LDL cholesterol on your body’s cells. Balsamic Vinegar also reduces the hardening of arteries, also known as atherosclerosis. As a result, balsamic vinegar also lowers and stabilizes blood pressure levels.
Vegetables: Having a variety of vegetables in your diet will offer you benefits of antioxidants (i.e., cancer and degenerative disease fighting properties). The body needs a variety of minerals, vitamins and antioxidants to neutralize free radicals. Each type works in different parts of the body, and in different parts of cells, which is why eating a variety of fresh fruits and vegetables is crucial.
